Green Eggs and Ham? Yes Ma'am! Yes Ma'am!
This is one of my go-to breakfasts both on the weekend and during the week because it’s so quick to make and looks way fancier than the effort it takes. You can tweak the below ingredients to your liking – sometimes I’ll add sliced tomato or avocado. Whatever you do, don’t skip the garlic! It’s key!
“Green Eggs and Ham”
1 slice of bread
1 clove garlic, peeled
1 slice of prosciutto
Small handful of arugula
Balsamic vinegar for seasoning
Salt and pepper for seasoning
Parmesan cheese for seasoning, shaved or grated
Toast the slice of bread. Cut one end off the garlic. Rub the raw end all over the toast. The toast will shave the garlic clove. I do both sides because I like garlic that much. On top of the toast, layer the slice of prosciutto followed by the arugula. Drizzle arugula with a little bit of balsamic vinegar. Cook egg to your liking – I prefer sunny side up. Layer egg on top of arugula and season with salt, pepper, and parmesan cheese. Enjoy!
